Broccoli Cheese Sformato

Before you start googling “Sformato” I’ll save you the trouble.  It’s an Italian custard, similar to a French soufflé but not nearly as airy.  They can be sweet, but most often are savory as I’ve done here.  And although they are commonly done in a ring mold, I find the individual ramekins work better.  Many recipes call for milk thickened with a roux, but by using the heavy cream that step can be omitted, albeit with more fat.  This is such an easy recipe and will even win over your non broccoli loving family members. I’m not a huge breakfast person, so when I do sit to one I like it to be something I crave.  Huevos Rancheros is probably my favorite breakfast indulgence.  It’s hearty, packed with flavor and there’s something about the creaminess of the soft yoke blending with the salsa, crisp tortilla and spicy sausage that just gets me.  Normally the tortillas are only fried for about 30 seconds to basically soften them and the addition of chorizo is definitely not authentic, but since this is my site-I make it how I like it.  Enjoy!
